After 17 years in European cuisine, a transformative experience at Jean George restaurant in Tokyo inspired Chef Hafizzul to reconnect with his Asian heritage. This marked the beginning of a culinary odyssey that has led him to Kuala Lumpur, where he led a restaurant that explored the rich culinary tapestry of Southeast Asia. His journey includes travels and work experiences in Michelin-starred restaurants and 5-star hotels, where he encountered a wealth of local and premium produce, deepening my appreciation for the exquisite flavors unique to the region.

Chef Hafizzul is committed to celebrating and elevating the richness of our culinary heritage, while also ensuring the preservation and appreciation of traditional techniques and their complexities. Growing up in Lumut, Malaysia, surrounded by the lush coastal environment, Chef Hafizzul spent invaluable time with his father exploring estuaries and mangroves. Together, they foraged for their meals, collecting snails, clams, and netting prawns—an experience that revealed the profound relationship between nature and food. Those forays into nature were not only about sustenance but also a communal activity, as they shared the bounty of our hunts with his father's friends during camping trips.

Engaging in such hands-on experiences shaped Chef Hafizzul’s early understanding of the interplay between nature and food, instilled in him a deep appreciation for the bountiful offerings of Southeast Asia.
